Crispy batter (with vodka)
- 400 g Rice flour
- 5 g Baking soda
- 55 g Honey
- 10 g Table salt
- 200 g Self raising flour
- 550 ml Beer
- 250 ml Vodka
- Mix all dry ingredients together
- Add slowly vodka + honey
- Finish with beer whisking very gently, don’t pour it all in case it gets too liquid
Tips: Try using a light lager beer, usually better fro batter. The honey give an amazing taste to the batter and the vodka make it very crispy. Don't do too much better in advance as keeping the fizz of the beer gives better results.
