Gnocchi

  • 1 kg Desire potato
  • 300 g All purpose flour
  • 50 g Parmesan cheese
  • 1 piece Egg (Whole)
  • 1 tbsp Table salt
  • 1 pinch Nutmeg whole
  • Boil the potatoes until are fully cooked making sure you can insert a knife through the centre easily
  • Remove all skin from the potatoes and mash them until soft and fluffy
  • Place the potatoes mash on a large surface and add flour, egg, parmesan, salt and nutmeg
  • Combine all the ingredients using your hands until the consistency is similar to a dough ball
  • Using a spatula take a handful of dough and start to roll it into a snake shape the thickness of a thumb
  • After you section up and rolled all of the dough into long snakes cut the gnocchi using a knife or a spatula
  • Toss all the gnocchi in flour to avoid them sticking together
  • Keep in the fridge until cooking


Tips:  While mixing the dough make sure the potatoes are hot and you touch the mix as little as possible.
