Gnocchi
- 1 kg Desire potato
- 300 g All purpose flour
- 50 g Parmesan cheese
- 1 piece Egg (Whole)
- 1 tbsp Table salt
- 1 pinch Nutmeg whole
- Boil the potatoes until are fully cooked making sure you can insert a knife through the centre easily
- Remove all skin from the potatoes and mash them until soft and fluffy
- Place the potatoes mash on a large surface and add flour, egg, parmesan, salt and nutmeg
- Combine all the ingredients using your hands until the consistency is similar to a dough ball
- Using a spatula take a handful of dough and start to roll it into a snake shape the thickness of a thumb
- After you section up and rolled all of the dough into long snakes cut the gnocchi using a knife or a spatula
- Toss all the gnocchi in flour to avoid them sticking together
- Keep in the fridge until cooking
Tips: While mixing the dough make sure the potatoes are hot and you touch the mix as little as possible.
